Namaskar. Welcome to nishamadhulika.com. Today we will make sumptuous Aloo Vadas. We will not fry these, but prepare in an appam maker, with very less oil. The Aloo Vadas will turn out really good, Let’s start making it. To make Aloo Vadas firstly prepare chickpea flour batter. Take 1/2 cup chickpea flour in a bowl, add some water to it and stir to make batter till lumps dissolve. Rather than adding much water, add less water and dissolve lumps, the lumps dissolve quickly. If you add much water at once then it takes time to dissolve the lumps. The chicpea flour lumps have dissolved, batter seems dense. Add water and make it a bit less dense in consistency. Dense chickpea flour batter is ready. It is of pouring consistency, though not very flowy. let’s add some spices to it. Add 1/3 tsp salt, 1/4 tsp red chili powder, less than 1/4 tsp turmeric powder, i. e 1/8 tsp take 1/8 tsp carom seeds, add it, this enhances the flavor. Mix all the spices well in the chickpea flour batter. Add 1 pinch baking soda to it, mix well. Keep the batter aside for 10 minutes to puff up. Till then let’s prepare stuffing from potatoes, for the Aloo Vadas. Take 3 boiled potatoes, peel and crumble them. Heat pan to make stuffing. add 1 tsp oil to the pan. Oil is rightly hot add 1/4 tsp cumin seeds, and slightly roast it. Keep flame low, to prevent spices from browning. Add 1/2 pinch asafoetida, less than 1/4 tsp turmeric powder, add 1/2 tsp coriander powder, 1 finely chopped green chili, add 1/2 tsp ginger paste, Add potatoes to it. Add 1/4 tsp red chili powder, Add less than 1/2 tsp salt. Keep flame medium, Mash and roast it for 2 to 3 minutes. Add some green coriander to it. Potatoes are mashed well and cooked for 3 to 4 minutes. Potatoes stuffing is ready, turn off flame. Keep in plate to cool off quickly. 10 minutes have passed, batter is puffed up. We took 1/2 cup water to make the batter, 2 tbsp water is left. Stuffing has cooled down now, grease hands with some oil. Pick a little stuffing an bind it in round balls. Make balls of the same size as of the appam maker. Make balls and keep in plate. Put appam maker to heat, keep flame low. Potato balls are ready, Appam maker is hot enough, pour 1 to 2 drops of oil in it. For Aloo vadas, lift a ball, coat it with chickpea flour batter. Put it in appam maker moulds to cook. Cover the appam maker, cook Aloo vadas on low flame, for 4 to 5 minutes. 4 minutes have passed, Aloo vadas are roasted from beneath. Pour some oil on top of the vadas, flip them. Cautiously flip all the aloo vadas like this, pour some oil over them. these will turn out crispy and good in color, You can skip it if desired, even then the bondas will turn out good. Using 1 tsp oil pour it over all the bondas, Cover and cook again on low flame for 3 to 4 minutes. 4 minutes have passed. Let’s check the vadas, If we check the other side, the bondas have turned brown, flip them again, as they are less roasted on upper side, let’s flip them. Cover and cook on low flame for 1 to 2 minutes. Aloo vadas are golden brown on both sides, Take out and keep in plate. Aloo Vadas in less oil is ready, Serve it with green coriander chutney, tomato sauce or your favorite chutney.
