Hi everyone, Ludo here! Welcome to my channel, Pastry Freak. Today, we’re making a seasonal tart since we’re making a strawberry tart. I do love it! and we’ll top it on a shortcake, you’ll see, it’s super good and doesn’t require special skills. Ready? Let’s move on to the recipe! Let’s start with the shortcake. To do it, we’ll need 3 eggs, 130g sugar, 150g soft butter, 200g flour, a pinch of salt 11g baking powder. Start mixing the egg yolks with the sugar in the stand mixer recipient until pale. Switch the whisk with the flat beater. Add the soft butter cut in chunks. Mix until incorporated. Add the flour sieved with salt and baking powder. Mix well until smooth. Plastic wrap the dough and chill for 2 hours. Once cooled, roll the dough out until 4mm thickness. Place the dough onto a sheet of baking paper Cut a 22cm diameter circle using an entremets circle. Remove the excess. And bake at 180°C for 20 minutes. Once cooked, remove the ring and let cool at room temperature. Let’s move on to the diplomat cream. To do it, we’ll need 310g whole milk, 1 vanilla bean, 1 egg yolk, 1 whole egg, 60g sugar, 40g cornstarch and 100g single cream. Let’s start making a crème pâtissière by infusing vanilla seeds and bean in the milk for 10 minutes. In the meantime, whip the whole egg and the egg yolk with the sugar. Add the cornstarch. Mix again. And pour the vanilla-infused milk into the mixture in three times. Pour the mixture back into the saucepan, cook at low temperature and keep stirring until you get a thick crème pâtissière. Transfer the crème into a bowl and put some plastic wrap on it to make sure it doesn’t dry out. Chill a few minutes. In the meantime, whip the very cold single cream in a bowl Once the crème pâtissière is back at 15°C, swiftly whip it. Add the whipped cream and fold it in. Don’t hesitate to use a whisk to facilitate mixing. Let’s move on to the presentation. To do so, you’ll need 400g strawberries. Pipe the diplomat cream on the cooled shortcake to create a corolla. Pipe the rest of the diplomat cream in the center of the cake. Place strawberries cut in half in a circle and slightly lean them back. That’s it! Our express strawberry tart is ready to be eaten.
