Father’s Day Chessboard Cake 300g milk chocolate or milk compound chocolate; 300g white compound chocolate pipping bags; tip 9 MM; set square( just for cakes) or spatula; A4 chessboard photocopy/printable ( measures 30cm x 30cm) X-acto knife; 30 cm or more ruler; 1 square cake (30 cm x 30cm); chocolate ganache Begin by melting the chocolate.If you use real chocolate you need to temper with cocoa butter powder. if you don’t know how to temper click the link above pour the chocolate into the mould. Make a King, a Queen, 2 Bishops, 2 Rooks , 2 Knights and 8 pawns. Use a toothpick to make the chocolate reach the most difficult places Shake itand tap it gently in order to release air bubbles Take off tthe excess let it set if the chocolate shows up on the other side a little whiter then its good to remove from the mold trim the edges with a knife Now it’s time to colour the white compound chocolate. Use chocolate colors (oil based colouring) add small amounts at a time until you have the colour you wish and a little of blue repeat the process to make the white ones if any piece cracks up, just use melted chocolate to fix it Print out a chessboard template (link in the description below) in A4 paper. Then use a ruler to measure if it has the same size as your cake pan cut out the grey squares. I used a ruler as a guide do not cut in a straight line, the more you have white squares joined the best is the assembling repeat the process until you can detatch all of the grey squares if you separate any of the white squares don’t worry, just save them all for later, they are going to be used later with a pencil draw your cake pan shape on a parchment paper turn the scratched side down Cut out from the outside of the frame turn the printed side down put the melted milk chocolate into a piping and cut off a little of the tip make little dots under the squares to hold them into place Now just draw the empty spaces. Use a toothpick to uniform the chocolate. after it is set release the chessboard carefully from the parchment paper trim off the edges turn the good side down. intercalate the milk squares with the paper ones assemble the pattern and then take off the paper squares and fill the empty spaces with the coloured compound chocolate beat a little the ganache , around 3 – 4 minutes and fill a piping bag with it spread some ganache on top of the cake and put on top of it the chocolate chessboard.
