Besan Paara (Spicy Indian Crackers) Recipe by Manjula

Today I will be making besan paare (spicy cracker). These are very flavorful and great for snacks. This recipe will serve 4-6. For this recipe we need: 1 cup of all purpose flour (plain flour or maida) 1 cup of gram flour (besan) 2 tablespoons of fine semolina (suji) 1.25 teaspoons of salt or adjust to your taste. 1 teaspoon of chili flakes, again you adjust to your taste. 1/4 teaspoon of carom seeds (ajwain) Pinch of asafoetida 4 tablespoons of oil About 1/2 cup of water to make a dough. This is a very easy recipe to make. You mix all the ingredients together and make a firm dough. Roll them very thin, slice them in long stripes and fry them. They are very flavorful and very crunchy. For the dough, let’s mix everything together. All purpose flour Gram flour Semolina Salt Chilli flakes Carrom seeds Asafoetida And oil. Mix everything together. So after you mix everything together it’s like a bread crumb. And now I am going to add the water. Don’t add all the water at the same time because it can take spoon less or more. And it will be little bit sticky to your hands because of the gram flour. I have to add little bit more water. This looks good. And you have to leave it for few minutes. So leave the dough for few minutes it will get firm. Dough has been sitting for about 10 minutes. So I am going to knead the dough before kneading I will oil my fingers so dough doesn’t stick to it. And it looks really good. I am going to oil little bit the surface. I am going to knead. Divide the dough in four equal parts. Roll them into flat patties. And roll them thin. They are very easy to roll. If it is sticking to the surface you can put little bit oil. I think I just need light oil. Pick it up to roll don’t go like this or this way. They don’t roll good and even. And little bit more. So they are it’s not as thin as papad it’s about roti or thin tortilla. I am going to transfer this on the cutting board. Going to prick it using the fork. So paares don’t puff while you are frying. Prick them several places. And now just cut them. They don’t have to be all even size. I think I am going to make them long. So just slice them from the center, that’s it. Let’s check the oil if it is ready. I am going to just put one paare in. As you see it is sizzling and slowly coming up. So oil is ready. If it has came right away on the top then oil got too hot and they will not be crunchy. Because they got fried too quick. So put the paares in the pan, as many you can easily turn them over. And it take about 3 minutes to fry them. You have to turn these paares occasionally. You don’t want to fry them too much they should be just light golden brown. Otherwise they taste kind of burn, they are too red. As you see they are easy to make you can serve them as chips also with your choice of dip. Paares are looking great, just the right color. And like I said it took about 3 minutes. And if you fry them on very high heat they will cook faster but they will not be crunchy. So they need enough time to get cooked all the way. Besan paares are looking great. I like to serve them with a dip which I make mixing yogurt and hari chutney. After you eat one, you cannot stop eating. They are really good. Thank you. And I will see you with new recipe.
